Easy Vegan Black Bean Soup Recipe!
This is a great vegan soup recipe to have on hand (and make) during this busy time of the year. Our easy vegan black bean soup is a delicious and healthy thick, hardy soup, with a zesty flavor. It super easy to make, and it will please the pickiest eater! Enjoy!
1/4 cup filtered water
1 large onion, chopped
3-4 celery stalks, chopped
3 carrots, chopped
4 cloves garlic, chopped
1 tablespoon ground cumin
1 pinch black pepper
4 cups vegetable broth
4 (15 ounce) cans black beans (BPA-free can)
1 (14.5 ounce) can crushed tomatoes (BPA-free can)
Heat filtered water in a large pot over medium-high heat. Saute onion, celery, carrots, and garlic for 5 minutes.
Season with cumin, and black pepper; cook for 1 minute.
Stir in vegetable broth, 2 cans of beans, and corn. Bring to a boil.
Meanwhile, in a blender, blend remaining 2 cans beans and tomatoes until smooth. Then, stir into boiling soup mixture.
Reduce heat to medium, and simmer for 15 minutes.
